The Netherlands is a cheese-loving country! On average, each Dutch person eats about 17 kilograms of cheese per year. To make cheese, milk is curdled by adding rennet and lactic acid. The proteins in the mixture clump together, trapping fat and moisture and creating a kind of sticky mass called “curd”. This curd is compressed and dipped in a brine of salt water. The duration of aging determines the quality and taste of our different types of cheeses.
Butter is made by skimming, churning and kneading milk. Then the butter is acidified with lactic acid bacteria. This acidification creates the unique taste and leading aromas of our different types of butter.
